What constraints does the space come with, what direction does the client want? It’s much easier for me to be creative within those confines. I always like to start with a bunch of fun, delicious snacks, followed by a raw fish preparation or a wagyu tartare, followed by a main and dessert. Seasonality and flavor always guide what each set of those dishes looks like. I always consider dietaries and have an option up my sleeve for those as well.
What’s your go-to signature dish?
I really try to steer away from “creating” a signature dish. If you’re lucky, your clientele will decide what becomes a signature. You’ll be lucky to have one dish people know you for and remember their whole lives. For me, that’s probably the macaroni, pig’s head, egg yolk pasta from my old restaurant, Acme. Hopefully we’ll manage to create some new signatures when Kiln opens, which is located at Sydney’s new Ace Hotel.

The large rose gold-plated Arabic numerals are applied to the dial and treated with luminescent material along with the triangle and two dots at noon and the hour markers at 3, 6 and 9 o’clock. Divided into five-second intervals, the white peripheral track stands out vividly against the brown dial. The propeller-style hands, with thin tips, are plated in rose gold and filled with lume, like the shorter hands on the two sub-dials. Finally, there is a rectangular date window at 3 o’clock with a white background to match the markings on the dial and black numerals.
The brown calfskin strap with white stitching and rivets (width 20mm) underscores the pilot theme perfectly. The advantage of a leather strap over a bracelet is that you can admire the movement of AAA replica watches.

Ample perlage adorns the base plate while the heads of screws that secure the bridges are polished to a sheen.
The Competitive Landscape
